Ingredients

  • 1 1/2 sticks margarine
  • 3 eggs
  • 1 1/2 cups sugar
  • 1 1/2 teaspoons soda
  • 6 mashed bananas
  • 1 cup grated coconut
  • 1 cup chopped nuts
  • 1 teaspoon vanilla
  • 3 cups flour

Instructions

  1. Mix sugar and margarine well.
  2. Add eggs one at a time, beating after each addition.
  3. Mix in mashed bananas and vanilla extract.
  4. Gradually add flour and baking soda, mixing until just combined.
  5. Fold in grated coconut and chopped nuts.
  6. Pour batter into a greased loaf pan.
  7. Bake at 350°F (175°C) for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before slicing and serving.
