Ingredients

  • 2 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter or low-fat margarine
  • 1 cup granulated sugar
  • 2 eggs
  • 1 cup mashed ripe bananas
  • 1/3 cup nonfat milk
  • 1 teaspoon lemon juice or vinegar
  • 1/2 cup chopped nuts

Instructions

  1. Sift the flour with the baking soda and salt.
  2. Cream the butter or margarine and gradually add the sugar, mixing well.
  3. Add the eggs and mashed bananas, blending thoroughly.
  4. Combine the nonfat milk and lemon juice or vinegar, allowing it to curdle.
  5. Slowly and alternately fold in the flour mixture and milk mixture, beginning and ending with the dry ingredients, blending well after each addition.
  6. Stir in the chopped nuts if desired.
  7. Pour the batter into a 9 x 5 x 3-inch pan sprayed with Pam.
  8. Bake in a preheated 350°F oven for 1 hour or until the bread springs back when lightly touched in the center.
