Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 3 to 4 mashed bananas (about 1 1/2 cups)
  • 1/2 cup egg substitute or 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup safflower oil
  • 3/4 cup plain nonfat yogurt
  • 2/3 cup raisins

Instructions

  1. Sift together flour, baking soda, sugar, and salt. Set aside.
  2. Whirl bananas, egg substitute or eggs, vanilla, and safflower oil in a blender; fold in yogurt.
  3. Add raisins to the banana mixture.
  4. Pour the wet mixture over the dry ingredients and blend with a wire whisk until smooth.
  5. Grease a loaf pan with safflower margarine and pour the batter into it.
  6. Bake for 1 hour at 350°F (175°C).
