Ingredients

  • 1 cup margarine or butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 cup mashed bananas (2 medium bananas)
  • 1 teaspoon vanilla
  • 2 cups all-purpose or unbleached flour
  • 1 cup quick cooking rolled oats
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 6 ounces semi-sweet chocolate chips
  • 1/2 cup chopped nuts

Instructions

  1. Preheat oven to 350°F and grease a 13 x 9-inch pan.
  2. In a large bowl, cream margarine, sugar, and eggs until well combined.
  3. Stir in buttermilk, mashed bananas, and vanilla, mixing thoroughly.
  4. Lightly spoon flour into measuring cup and level off.
  5. Add flour, rolled oats, baking soda, and salt to the mixture; stir well.
  6. Fold in semi-sweet chocolate chips.
  7. Spread the batter evenly in the prepared pan.
  8. Sprinkle chopped nuts on top of the batter.
  9. Bake for 30 to 35 minutes at 350°F, until a toothpick inserted into the center comes out clean.
