Ingredients

  • 2/3 cup dry sherry
  • 2/3 cup honey
  • 1/4 cup cider vinegar
  • 1/4 cup soy sauce
  • 1/4 cup chopped onion
  • 1 teaspoon Worcestershire sauce
  • dash of salt and pepper
  • 1 clove garlic
  • 1/2 teaspoon ground ginger
  • 4 dashes hot sauce
  • 1 can tomato sauce
  • 5 to 6 pounds pork roast
  • barbecue sauce (homemade or store-bought)

Instructions

  1. Combine all ingredients in a saucepan and simmer for 15 minutes.
  2. Cook the pork roast in a crock-pot on low for 8 hours or in an oven at 300°F for 2 1/2 hours, wrapped well in foil if baked.
  3. Allow the cooked roast to cool, then shred the meat, removing fat and bones.
  4. Place the shredded pork in a baking pan, pour the sauce mixture over it, and mix well.
  5. Heat in the oven at 300°F for 30 minutes before serving.
