  • 1 c. medium pearl barley
  • 8 c. water

  • 2 ears corn
  • 1 red bell pepper
  • 1 poblano pepper
  • 3 green onions

  • 1/4 c. fresh lime juice
  • 1 Tbsp. cider vinegar

Instructions

  1. Put barley in a bowl.
  2. Cover with warm water and rub gently; drain and repeat until water runs clear.
  3. Drain the barley.
  4. Bring 8 cups of water to a boil in a large pot.
  5. Add 2 teaspoons of salt and the barley, then return to a boil.
  6. Simmer covered until the barley is tender, about 30 minutes.
  7. Drain the barley and rinse with cold water; drain well.
  8. Husk the corn ears and cook them until tender, then cut the kernels off.
  9. Chop the red bell pepper and poblano pepper into small pieces.
  10. Thinly slice the green onions.
  11. Peel, seed, and dice the papaya.
  12. In a large bowl, combine the cooked barley, corn kernels, peppers, green onions, and papaya.
  13. Add chopped cilantro, ground cumin, lime juice, cider vinegar, black pepper, and olive oil.
  14. Mix well and serve.
