- Boil beets on medium heat in 4 quarts of water for 30 minutes.
- Add the rest of the vegetables and boil for another 30 minutes.
- Add 1 pint of tomato juice and bring to a boil for about 2 minutes.
- Add butter and stir in well until melted.
- Add whipping cream or half and half and heat gently, but do not boil.
- Adjust with vinegar to taste and serve hot.
