Ingredients

  • 4 medium beets, diced
  • 1 large onion
  • 1/4 medium cabbage, shredded
  • 2 carrots, diced
  • 2 or 3 celery stalks, diced
  • 3 Tbsp. parsley, chopped
  • 1 1/2 tsp. salt
  • 1/2 cup butter
  • 1 pint tomato juice
  • 1 cup whipping cream or half and half

Instructions

  1. Boil beets on medium heat in 4 quarts of water for 30 minutes.
  2. Add the rest of the vegetables and boil for another 30 minutes.
  3. Add 1 pint of tomato juice and bring to a boil for about 2 minutes.
  4. Add butter and stir in well until melted.
  5. Add whipping cream or half and half and heat gently, but do not boil.
  6. Adjust with vinegar to taste and serve hot.
