Ingredients

  • 2 c. flour
  • 1 3/4 c. sugar
  • 1 tsp. baking soda
  • 1 c. oil
  • 3 eggs
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 5 cooking apples
  • 1/2 c. chopped pecans or walnuts
  • 1/4 to 1/2 c. confectioners sugar

Instructions

  1. Preheat oven to 350°F.
  2. Combine flour, sugar, baking soda, cinnamon, and salt in a bowl.
  3. Add oil and slightly beaten eggs, mixing well.
  4. Fold in peeled and sliced apples and chopped nuts.
  5. Spread batter evenly into an ungreased 11 x 14-inch sheet cake pan.
  6. Bake for 35 minutes or until the center springs back when lightly touched.
  7. Allow the cake to cool slightly, then dust with confectioners sugar and cut into squares to serve.
