Bean Ham Soup

Ingredients

  • 1/2 lb ham, cubed
  • 2 celery stalks, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 1 medium zucchini, sliced
  • 2 cans navy beans
  • 1 can white kidney beans
  • 1 tbsp olive oil
  • 1/2 tsp basil
  • 1/4 tsp salt
  • 1 (14 1/2 oz) can chopped tomatoes
  • 1 (14 1/2 oz) can chicken broth
  • 1/2 bag fresh spinach
  • 1 cup water

Instructions

  1. Remove 1 1/2 cups of beans and mash them; set aside.
  2. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  3. Add the chopped onion, diced celery, sliced carrots, and sliced zucchini; cook until vegetables are tender, about 5-7 minutes.
  4. Add the cubed ham and cook for another 2-3 minutes.
  5. Stir in the chopped tomatoes, chicken broth, and water.
  6. Add basil and salt; bring the mixture to a boil.
  7. Reduce heat and simmer for 20-25 minutes.
  8. Add the remaining beans and mashed beans to the soup; cook for an additional 10 minutes.
  9. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  10. Adjust seasoning if needed and serve hot.
