Beef Orzo with Vegetables
Ingredients
- 3/4 cups Chopped Carrot ⓘ
- 1 whole Red Pepper Chopped ⓘ
- 1/2 whole Onion, Chopped ⓘ
- 4 cloves Garlic, Chopped ⓘ
- 2 Tablespoons Butter ⓘ
- 1- 1/2 cup Orzo Pasta ⓘ
- 3 cups Beef Broth ⓘ
- 1 Tablespoon Thyme, Divided ⓘ
- 1/2 pounds Ground Beef, Browned ⓘ
- 3 Tablespoons Olive Oil ⓘ
- 4 dashes Worcestershire Sauce ⓘ
- 1/2 cups Parmesan Cheese, Grated ⓘ
- 3 Tablespoons Fresh Herbs (thyme, Sage) ⓘ
- Salt And Pepper ⓘ
Instructions
- 1.
- Chop vegetables (carrot, red pepper, onion) and garlic and set aside.
- Substitute vegetables to tastebrocolli, green beans, etc, would be good.
- 2.
- Melt butter in large saucepan and add orzo pasta on medium high heat.
- Cook and stir occassionally till pasta is lightly browned.
- 3.
- Add beef broth to pasta and bring to boil.
- Add half of the thyme and a bit of salt and pepper to the pasta.
- Reduce heat to simmer, cover and cook for approximately 20 minutes, till liquid is reduced.
- Stir occassionally.
- 4.
- While pasta is cooking, use a frying pan to brown ground beef with a bit of salt and pepper.
- Drain and set aside.
- 5.
- Use the same frying pan to brown onion, red pepper and carrot with olive oil.
- Cook on low heat to soften and cook without burning.
- 6.
- When pasta is nearly done, add garlic and ground beef back to the vegetables to heat through.
- Add Worcestershire sauce to the pasta and stir.
- 7.
- Add the pasta to the vegetable and beef mix and stir to combine.
- Add parmesan cheese and fresh herbs.
- Stir and serve.
