Ingredients

  • large baking potatoes
  • 1 lb. lean ground beef
  • 1/2 c. chopped onion
  • 1/4 c. green pepper, chopped
  • 1/4 c. celery, chopped
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 tsp. nutmeg
  • 1/2 c. sour cream
  • 1/2 c. butter or margarine
  • 1 c. Cheddar cheese
  • 1 (8 oz.) can tomato sauce

Instructions

  1. Cut the large baking potatoes lengthwise in half and scoop out and reserve the potato shells.
  2. Brown the ground beef, chopped onion, chopped green pepper, and chopped celery in 1 ounce of vegetable oil.
  3. Drain the fat from the beef mixture.
  4. Add salt, pepper, nutmeg, and tomato sauce to the beef mixture and simmer briefly.
  5. Fill each potato shell with the beef mixture.
  6. Top with cheddar cheese and bake until cheese is melted and bubbly.
  7. Serve topped with sour cream.
