Beef Stroganoff Soup

Ingredients

  • 1 lb beef, small cubes
  • 1/2 medium onion, chopped
  • 6 oz mushrooms, canned or fresh
  • 1/2 pt sour cream
  • 6 oz noodles, cooked and drained
  • salt and pepper to taste
  • 6 cups beef stock

Instructions

  1. Saute beef cubes and chopped onion until browned.
  2. Cover and simmer for 15 minutes.
  3. If using fresh mushrooms, slice and sauté during the last few minutes of simmering.
  4. Remove onion and beef from the drippings.
  5. Turn heat to medium and blend in sour cream, salt, and pepper.
  6. Add beef stock, mushrooms, cooked beef, onion, and noodles.
  7. Heat until steaming and serve.
