A hearty meat loaf with savory beef, oats, vegetables, and spices, baked to perfection and topped with ketchup or tomato sauce, ideal for family dinners.

Ingredients

  • 2 1/2 lb. lean ground beef
  • 1/4 cup onions, diced
  • 1 medium green pepper, diced
  • 1/2 lb. quick dry oats
  • 2 eggs
  • 1/4 cup milk
  • 1/2 cup tomato juice
  • 3/4 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 tablespoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix all ingredients thoroughly in a large bowl.
  3. Shape the mixture into a loaf and pat to cover air pockets.
  4. Place the loaf in a loaf pan.
  5. Bake for 45 minutes to 1 hour.
  6. Drain off excess grease.
  7. Garnish with ketchup or tomato sauce and thinly sliced green pepper rings before serving.
