Ingredients

  • 2 eggs
  • 1 cup homogenized milk
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 small can cream corn
  • 2 cups self-rising cornmeal
  • 1 pound ground beef
  • 1 large chopped onion
  • 1 1/2 cups sharp cheddar cheese
  • 3 tablespoons oil

Instructions

  1. Brown the ground beef and chopped onion in a skillet, then drain excess fat.
  2. In a mixing bowl, combine the cornmeal, soda, salt, cream corn, eggs, and milk.
  3. Pour half of the cornmeal mixture into a greased 9 x 13-inch baking pan.
  4. Sprinkle half of the shredded cheddar cheese over the cornmeal layer.
  5. Add the cooked ground beef and chopped onion evenly over the cheese.
  6. Pour the remaining cornmeal mixture on top, spreading evenly.
  7. Bake in a preheated oven at 375°F (190°C) for approximately 40 minutes or until golden brown.
