Ingredients

  • 1 1/2 to 2 lb. beef
  • 2 medium tomatoes
  • 2 carrots
  • 2 stalks celery
  • 2 medium red potatoes
  • 2 medium onions
  • 2 bay leaves
  • 1 tsp. basil
  • 1 tsp. Italian seasoning
  • 4 cups beef broth

Instructions

  1. Add all ingredients into a microwave-proof casserole.
  2. Cover with lid.
  3. Cook on High for 20 minutes.
  4. Stir the mixture.
  5. Cover and cook on medium (50%) power for an additional 20 minutes.
  6. Remove from microwave and let stand, covered, for 5 minutes.
  7. Discard bay leaves before serving.
