Ingredients

  • 2 c. boiling water
  • 4 eggs, beaten
  • 5 tsp. baking soda
  • 1 qt. buttermilk
  • 1 c. shortening
  • 5 c. flour
  • 2 c. sugar
  • 1 tsp. salt
  • 1 c. dates
  • 4 c. All-Bran
  • 2 c. 40% bran
  • 2 c. pecans, chopped

Instructions

  1. Add baking soda to boiling water and set aside.
  2. Cream shortening and sugar together.
  3. Add beaten eggs, flour, buttermilk, salt, and water to the mixture.
  4. Mix well, then fold in the remaining ingredients.
  5. Pour batter into muffin tins and bake at 375°F for 20 minutes.
