Ingredients

  • 2 lb dried navy beans
  • 2 qt cold water
  • 1 large onion chopped
  • 1 Tbsp salt
  • 4 tsp vinegar
  • 1 tsp mustard
  • 2 Tbsp brown sugar
  • 3/4 c molasses
  • 1/2 c catsup
  • 1 lb Cowboy bacon or salt pork
  • pepper to taste

Instructions

  1. Wash and sort the navy beans; simmer, covered, in water for 30 minutes. Drain and reserve the stock.
  2. Combine the remaining ingredients, including the Cowboy bacon or salt pork cut into 1/2-inch pieces.
  3. Place the mixture in a 2 1/2-quart casserole dish; add the cooked beans.
  4. Cover with the reserved bean stock.
  5. Bake, covered, at 250°F for 7 to 8 hours.
  6. Stir occasionally and add liquid as needed during baking.
