- Wash and sort the navy beans; simmer, covered, in water for 30 minutes. Drain and reserve the stock.
- Combine the remaining ingredients, including the Cowboy bacon or salt pork cut into 1/2-inch pieces.
- Place the mixture in a 2 1/2-quart casserole dish; add the cooked beans.
- Cover with the reserved bean stock.
- Bake, covered, at 250°F for 7 to 8 hours.
- Stir occasionally and add liquid as needed during baking.
