Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 1/2 cup buttermilk or 6 oz plain yogurt
  • 2 teaspoons vanilla extract
  • 3 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 4 cups grated carrots
  • 1 cup chopped nuts or granola

Instructions

  1. Combine eggs, sugar, vegetable oil, buttermilk or yogurt, and vanilla in a large bowl.
  2. Beat well until smooth.
  3. Gradually mix in flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  4. Stir in grated carrots and chopped nuts or granola.
  5. Pour the batter into a greased and floured 13 x 9-inch cake pan.
  6. Bake at 350°F (175°C) for 60 to 70 minutes, until a toothpick inserted in the center comes out clean.
  7. Allow to cool slightly before serving plain or frosting with cream cheese frosting.
