Bill'S Carrot Cake

Ingredients

- 1 cup vegetable oil ⓘ
- 1/2 cup buttermilk or 6 oz plain yogurt ⓘ

- 3 cups flour ⓘ
- 2 teaspoons baking soda ⓘ
- 1 teaspoon salt ⓘ
- 2 teaspoons cinnamon ⓘ
- 1 teaspoon nutmeg ⓘ
- 1/2 teaspoon ginger ⓘ
- 1/4 teaspoon cloves ⓘ
- 4 cups grated carrots ⓘ
- 1 cup chopped nuts or granola ⓘ
Instructions
- Combine eggs, sugar, vegetable oil, buttermilk or yogurt, and vanilla in a large bowl.
- Beat well until smooth.
- Gradually mix in flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
- Stir in grated carrots and chopped nuts or granola.
- Pour the batter into a greased and floured 13 x 9-inch cake pan.
- Bake at 350°F (175°C) for 60 to 70 minutes, until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before serving plain or frosting with cream cheese frosting.
