  • 2 tsp. instant beef bouillon
  • 3/4 cup boiling water
  • 1 lb. lean ground beef
  • 3/4 cup Bisquick
  • 1/2 cup crushed saltines
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell peppers
  • 2 Tbsp. catsup
  • 1/8 tsp. pepper
  • 2 or 3 medium potatoes, cut into wedges
  • 4 slices American cheese, halved
  • 1 (4 oz.) can sliced mushrooms

Instructions

  1. Dissolve bouillon in boiling water; save 1/2 cup for later.
  2. Mix all ingredients except potatoes, 1/2 cup bouillon, cheese, and mushrooms in a large bowl.
  3. Pat the meat loaf mixture into a 9-inch skillet, shaping it to within 1 inch of the edge.
  4. Pour the remaining bouillon around the edge of the meat loaf.
  5. Arrange potatoes on top of the meat loaf in a spoke fashion.
  6. Cover with a tight-fitting lid or foil and a lid.
  7. Cook on low heat on the stovetop for 40 to 50 minutes until potatoes are tender.
  8. Place cheese and mushrooms on top of the potatoes; continue cooking until the cheese melts.
