Ingredients

  • 1 cup shortening
  • 2 cups brown sugar
  • 2 eggs
  • 2 egg yolks
  • 1 cup sour milk
  • 2 1/2 cups flour
  • 1/8 teaspoon cloves
  • 1 teaspoon cinnamon
  • 1 teaspoon soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Combine shortening and brown sugar until well blended.
  2. Beat in eggs and egg yolks.
  3. Sift together flour, cloves, cinnamon, soda, baking powder, and salt.
  4. Add the dry ingredients to the creamed mixture alternately with sour milk, beginning and ending with the dry ingredients.
  5. Mix well to combine.
  6. Grease and line a large tube pan with wax paper.
  7. Pour the batter into the prepared pan.
  8. In a separate bowl, beat 2 egg whites with 1 cup brown sugar until stiff peaks form.
  9. Spread this meringue mixture evenly over the batter and sprinkle with pecans.
  10. Bake at 350°F (175°C) for 45 minutes, ensuring the oven shelf is below the center to prevent the topping from browning too much.
