Ingredients

  • 1/4 cup mayonnaise
  • 5 slices bread, toasted
  • 4 slices American cheese
  • 12 bacon slices, cooked and crumbled
  • 4 eggs
  • 1 tomato, sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup milk
  • 1/2 cup shredded Cheddar cheese
  • 2 green onions, thinly sliced
  • shredded lettuce

Instructions

  1. Spread mayonnaise on one side of each slice of toast and cut into small pieces.
  2. Arrange the toast, mayonnaise side up, in a greased 8-inch square baking dish.
  3. Top the toast with cheese slices and crumbled bacon.
  4. In a skillet, fry the eggs over medium heat until completely set.
  5. Place the cooked eggs over the bacon in the baking dish.
  6. Top with sliced tomatoes and sprinkle with shredded Cheddar cheese and green onions.
  7. Bake in a preheated oven at 375°F (190°C) until heated through and cheese is melted, about 20 minutes.
  8. Serve warm, garnished with shredded lettuce if desired.
