Ingredients

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups plain flour
  • 1 cup mashed bananas
  • 1 teaspoon soda
  • 1/4 teaspoon salt
  • 1/2 cup oatmeal
  • 1/2 cup chopped nuts
  • 1/2 cup blueberries

Instructions

  1. Cream the sugar and shortening until light and fluffy.
  2. Add eggs, one at a time, and beat well.
  3. Add mashed bananas and mix well.
  4. Combine with the remaining ingredients and mix thoroughly.
  5. Pour batter into a greased and floured loaf pan.
  6. Bake at 350°F (175°C) for 55 minutes.
  7. Cool in the pan for 10 minutes before removing.
