Ingredients

  • 1 large fresh beet
  • 2 carrots
  • 1 bunch fresh parsley
  • 2 onions
  • 1 tablespoon tomato paste
  • 2 fresh tomatoes
  • 1 tablespoon vinegar
  • 1 teaspoon sugar
  • 1 1/2 pounds beef
  • 1 quart beef bouillon
  • 1 small head cabbage
  • 2 medium potatoes

Instructions

  1. Make a beef bouillon by cooking beef, 1 onion, 1 carrot, and water for 1 to 1 1/2 hours, ensuring there is 1 quart of liquid at the end.
  2. Meanwhile, chop the beet, 1 carrot, and 1 onion into long, thin pieces.
  3. In a separate pan, combine tomato paste, 2 fresh tomatoes, vinegar, sugar, and 1 cup water, then simmer for 30 to 40 minutes.
  4. Chop potatoes and carrots and add them to the boiling beef bouillon, cooking for 10 minutes.
  5. Add the chopped vegetables, including the beets, to the soup and simmer until tender.
