Borsch(Ukrainian)
A hearty, earthy beet soup with tender beef, fresh cabbage, and a splash of lemon—rich, comforting, and perfect for chilly evenings.

Instructions
- Brown beef bones in a pot.
- Add 3 cups water and simmer for at least 1 hour.
- Remove bones, cool broth, and skim off all fat.
- Cut meat from bones into small pieces and add to the cooled broth.
- Saute chopped onion in vegetable oil until golden.
- Add beets, carrot, and celery and cook for 5 minutes.
- Add 6 cups boiling water, the remaining whole onion, bay leaf, dill, lemon juice, and tomatoes; simmer for 15 minutes.
- Add cabbage and simmer another 20 minutes; then remove bay leaf, whole onion, and dill stalk.
- Add the vegetable mixture to the beef broth and heat through.
- Serve with a dollop of sour cream.
