Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 2 cups peeled, grated zucchini
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 3 cups flour
  • 1 teaspoon vanilla
  • 3 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 cup nuts
  • 1 cup raisins

Instructions

  1. Blend eggs, sugar, oil, and grated zucchini until well combined.
  2. Sterilize and grease wide-mouthed, tapered jars.
  3. Fill jars slightly more than half with batter.
  4. Place jars on a cookie sheet and bake at 300°F (150°C) for 35 to 40 minutes.
  5. Wipe rims thoroughly with a clean cloth after baking.
  6. Put hot lids on jars immediately to seal.
  7. Allow jars to seal within 1 or 2 minutes.
  8. Store for 2 to 3 years.
