Ingredients

  • pastry for 9-inch pie
  • 1 cup grated Swiss cheese
  • 1/4 cup chopped green onions
  • 1/4 cup chopped ripe olives
  • 8 oz fresh mushrooms
  • 1 small tomato peeled and chopped
  • 1 tablespoon flour
  • 3 eggs
  • 1/2 cup half and half

Instructions

  1. Preheat oven to 375°F.
  2. Line a 9-inch pie tin with pastry.
  3. In a small bowl, mix Swiss cheese, green onions, olives, mushrooms, and chopped tomato. Toss to combine.
  4. Add flour to the mixture and toss to coat.
  5. Transfer the cheese mixture to the prepared pastry.
  6. In a small bowl, beat eggs and half and half with a fork until well combined.
  7. Crumble the Boursin cheese into the egg mixture and whisk until smooth.
  8. Pour the egg and Boursin mixture over the cheese filling in the pie.
  9. Bake in the preheated oven for 35 minutes or until golden and a knife inserted comes out clean.
  10. Let cool slightly before cutting and serving.
