Ingredients

  • 1 egg
  • 1 teaspoon baking powder
  • 1 tablespoon molasses
  • 1 teaspoon baking soda
  • 1 ripe banana
  • 1 cup all-purpose flour
  • 1 cup bran cereal
  • 1 tablespoon margarine
  • 1/4 cup milk
  • 1 tablespoon honey
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Spray muffin tin with cooking spray or line with paper liners.
  3. In a medium-sized bowl, sift together flour, baking powder, baking soda, and salt.
  4. Stir in the bran cereal.
  5. In another bowl, mash the bananas and mix with eggs, molasses, honey, and milk.
  6. Add the wet ingredients to the dry ingredients and stir until just combined.
  7. Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  8. Bake for approximately 15 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove from oven and let cool slightly before serving.
