Ingredients

  • 1/3 cup nonfat dry milk
  • 1/3 cup ice water
  • 3 eggs
  • 1/3 cup brown Sugar Twin
  • 3 tablespoons melted margarine
  • 2 teaspoons instant coffee powder
  • 1 teaspoon vanilla
  • 1 1/2 cups sifted flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 mashed bananas

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9 x 9 x 2-inch pan.
  3. In a bowl, whip the nonfat dry milk and ice water until stiff peaks form.
  4. In another bowl, beat the eggs until thick and lemon-colored.
  5. Add brown Sugar Twin, melted margarine, instant coffee powder, and vanilla to the eggs; mix well.
  6. Sift together the flour, baking powder, baking soda, and salt.
  7. Stir the flour mixture into the egg mixture until well combined.
  8. Add the mashed bananas and fold in the whipped dry milk mixture.
  9. Spread the batter evenly in the prepared pan.
  10. Bake for 25 to 30 minutes or until tests done.
