Ingredients

  • 3 oz. cream cheese
  • 2 eggs
  • 3 cups boiled noodles
  • butter
  • 1/2 cup cottage cheese
  • 1/2 teaspoon salt
  • cracker crumbs
  • 1 chopped onion
  • 1/2 green pepper
  • 2 bay leaves
  • 5 cloves garlic
  • 1 oz. olive oil
  • 1 teaspoon oregano
  • 1 tsp. oregano (flat)

Instructions

  1. Cook the noodles according to package instructions and drain.
  2. In a small pan, melt butter and sauté chopped onion, sliced green pepper, crushed garlic, and oregano until fragrant and tender, about 10 minutes.
  3. In a large mixing bowl, combine the cooked noodles, cream cheese, drained cottage cheese, beaten eggs, salt, and the sautéed vegetables; mix well.
  4. Transfer the mixture into a buttered ring mold or greased baking dish, shaping into a ring if desired.
  5. Sprinkle cracker crumbs over the top of the noodle ring.
  6. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until golden brown and set.
  7. Serve hot, optionally garnished with finely chopped onions.
