Ingredients

  • 2 c. cooked chicken, skinned and boned, then cut into small pieces
  • 1 egg
  • 1 c. bread crumbs, lightly toasted
  • 2 tsp. parsley
  • 1 Tbsp. margarine
  • 1/2 tsp. poultry seasoning
  • 1/2 chopped onion
  • chicken broth

Instructions

  1. Put margarine in a skillet and heat.
  2. Add poultry seasoning and sauté lightly in the margarine.
  3. Combine cooked chicken, toasted bread crumbs, sautéed seasonings, optional chopped onion, and egg in a bowl.
  4. Add enough chicken broth to bind the mixture into patties.
  5. Form the mixture into patties.
  6. Use immediately or freeze the patties individually for later use.
  7. Thaw slightly before frying the patties.
