Ingredients

  • 1/2 lb. sausage
  • 2 c. sliced carrots
  • 2 c. sliced celery
  • 1 large onion
  • 1 clove garlic
  • 2 eggs
  • 4 c. cooked rice

Instructions

  1. Brown the sausage in a skillet and drain off the grease.
  2. Optional: Roll sausage in paper towels for more grease removal, then return to skillet.
  3. Add sliced carrots, sliced celery, chopped onion, and pressed garlic to the skillet.
  4. Simmer the mixture in the covered skillet until the vegetables reach desired tenderness.
  5. Add the scrambled and chopped eggs to the skillet.
  6. Stir in the cooked rice and mix well.
  7. Season the fried rice as desired and serve hot, with hot sauce if preferred.
