Brick Cake(Sugar-Free)
A wholesome, sugar-free brick cake with fruity flavors from peaches and bananas, perfect for a healthy snack or dessert for all ages and dietary needs.
Ingredients
- 2 cups oatmeal ⓘ
- 2 cups whole wheat flour ⓘ
- 2 cups cream of wheat ⓘ
- 1 cup powdered skim milk
- 1 teaspoon baking powder ⓘ
- 1 can chopped peaches, drained ⓘ
- 5 to 6 ripe bananas ⓘ
- 1 cup concentrated apple juice (frozen) ⓘ
- 1/2 cup oil ⓘ
- 1/2 to 1 cup skim milk ⓘ
- 1 tablespoon cinnamon ⓘ
- 1/2 to 1 cup raisins ⓘ
Instructions
- Mix all dry ingredients, then add the liquid, leaving milk for last to give the right texture.
- Add raisins to the mixture.
- Pour the batter into glass baking dishes, filling them to a depth of 1/2 to 3/4 inch.
- Use a 9 x 13-inch and a 9 x 9-inch dish, or similar sizes.
- Preheat oven to 350°F (175°C). Bake until done, approximately 30 to 40 minutes.
- Check for doneness by inserting a knife into the center; it should come out clean.
- Allow to cool before cutting into squares.
