- Finely roll 12 crackers.
- Mix cracker crumbs, ground turkey, chopped onion, 2 tablespoons chili sauce, chopped parsley, and beaten egg until well combined.
- On waxed paper, pat the meat mixture into a 12 x 8-inch rectangle.
- Reserve 2 tablespoons of shredded cheese; sprinkle remaining cheese and drained chopped broccoli onto the meat mixture, leaving a 1/2-inch border.
- Coarsely break the remaining 12 crackers.
- Sprinkle the broken crackers over the broccoli, pressing lightly into the meat mixture.
- Starting at the short end, roll up the meat mixture jellyroll fashion using waxed paper to help roll; seal the ends.
- Place the loaf into a 13 x 9 x 2-inch baking dish.
- Bake at 350°F (175°C) for 50 to 55 minutes.
- During the last 5 minutes of baking, spread the remaining 2 tablespoons chili sauce over the meatloaf and sprinkle with the reserved cheese.
