Ingredients

  • 24 crackers
  • 1 1/2 lb. ground turkey
  • 1/3 cup chopped onion
  • 1/4 cup chili sauce
  • 1 tablespoon chopped parsley
  • 1 egg, beaten
  • 1 cup shredded reduced fat Cheddar cheese
  • 1 (10 oz.) package frozen chopped broccoli, thawed and drained

Instructions

  1. Finely roll 12 crackers.
  2. Mix cracker crumbs, ground turkey, chopped onion, 2 tablespoons chili sauce, chopped parsley, and beaten egg until well combined.
  3. On waxed paper, pat the meat mixture into a 12 x 8-inch rectangle.
  4. Reserve 2 tablespoons of shredded cheese; sprinkle remaining cheese and drained chopped broccoli onto the meat mixture, leaving a 1/2-inch border.
  5. Coarsely break the remaining 12 crackers.
  6. Sprinkle the broken crackers over the broccoli, pressing lightly into the meat mixture.
  7. Starting at the short end, roll up the meat mixture jellyroll fashion using waxed paper to help roll; seal the ends.
  8. Place the loaf into a 13 x 9 x 2-inch baking dish.
  9. Bake at 350°F (175°C) for 50 to 55 minutes.
  10. During the last 5 minutes of baking, spread the remaining 2 tablespoons chili sauce over the meatloaf and sprinkle with the reserved cheese.
