Ingredients

  • 2 lb. fresh broccoli
  • 2 (12 1/2 oz.) cans chicken broth
  • 3 c. milk
  • 1 c. chopped ham
  • 1/4 tsp. pepper
  • 1 c. light cream
  • 1/2 lb. Swiss cheese, grated
  • 1/4 c. butter

Instructions

  1. In a large pot, cook broccoli in 1 can of chicken broth for 7 minutes.
  2. Remove broccoli and chop coarsely.
  3. Add remaining broth, milk, chopped ham, and pepper to the pot.
  4. Bring to a boil over medium heat, stirring occasionally.
  5. Stir in light cream, grated Swiss cheese, butter, and chopped broccoli.
  6. Heat just to serving temperature without boiling.
