Broccoli-Mushroom Casserole

Ingredients

  • 1 large head fresh broccoli
  • 3 Tbsp. butter
  • 1/2 lb. fresh mushrooms
  • 1 c. mayonnaise
  • 8 Tbsp. butter
  • 1 c. half and half
  • 2 eggs
  • 1 small onion
  • 1 tsp. salt
  • 1 tsp. pepper

Instructions

  1. Place broccoli in a large saucepan with 1 inch of water and bring to a boil.
  2. Cover and steam for 5 minutes, then drain and chop coarsely.
  3. Heat 3 tablespoons butter in a skillet, add mushrooms and sauté for 5 minutes, stirring occasionally.
  4. Preheat oven to 350°F (175°C).
  5. In a large mixing bowl, combine 8 tablespoons butter, chopped onion, sautéed mushrooms, half and half, salt, pepper, mayonnaise, and beaten eggs.
  6. Mix all ingredients thoroughly.
  7. Add 1 cup shredded cheese and 1 1/2 cups crushed Ritz crackers, then mix well.
  8. Scrape the mixture into a baking dish.
  9. Sprinkle remaining cheese and crackers on top.
  10. Bake for 30 to 40 minutes or until a toothpick inserted in the middle comes out clean.
  11. Let stand for 10 minutes before serving.
