Broccoli-Mushroom Casserole
A creamy broccoli and mushroom casserole with cheesy topping, perfect for family dinners or potlucks, blending rich flavors and comforting textures.

- Place broccoli in a large saucepan with 1 inch of water and bring to a boil.
- Cover and steam for 5 minutes, then drain and chop coarsely.
- Heat 3 tablespoons butter in a skillet, add mushrooms and sauté for 5 minutes, stirring occasionally.
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, combine 8 tablespoons butter, chopped onion, sautéed mushrooms, half and half, salt, pepper, mayonnaise, and beaten eggs.
- Mix all ingredients thoroughly.
- Add 1 cup shredded cheese and 1 1/2 cups crushed Ritz crackers, then mix well.
- Scrape the mixture into a baking dish.
- Sprinkle remaining cheese and crackers on top.
- Bake for 30 to 40 minutes or until a toothpick inserted in the middle comes out clean.
- Let stand for 10 minutes before serving.
