Ingredients

  • 1 lb. fresh broccoli
  • 8 oz. fresh mushrooms
  • 8 oz. butter
  • 1 c. flour
  • 1 qt. half and half
  • 4 bouillon cubes
  • 4 c. water (for dissolving bouillon)
  • 1 tsp. salt

Instructions

  1. Clean and cut the broccoli into florets.
  2. Steam the broccoli in 1/2 cup water until tender, then set aside.
  3. Melt butter in a saucepan over medium heat.
  4. Add flour to the melted butter to make a roux, stirring well.
  5. Cook the roux for 2 to 4 minutes.
  6. Add dissolved bouillon to the roux, stirring with a wire whip, and bring to a boil.
  7. Add the steamed broccoli, sliced mushrooms, half and half, salt, and white pepper to the saucepan.
  8. Heat the soup until warmed through, but do not let it boil.
