Broccoli With Rigatoni

Ingredients

  • 8 Tbsp. olive oil
  • 2 Tbsp. butter
  • 4 cloves garlic, minced
  • 1 bunch broccoli, separated into florets
  • 1 c. chicken broth
  • 1 c. fresh basil, coarsely chopped
  • pepper
  • grated cheese

Instructions

  1. In a large skillet, heat 8 tablespoons of olive oil, 2 tablespoons of butter, and minced garlic until the pan gets very hot.
  2. Add 1 cup of chicken broth to the skillet.
  3. Add the broccoli florets to the skillet.
  4. Cover and simmer until the broccoli is al dente.
  5. Add half of the chopped fresh basil and the drained, hot rigatoni to the skillet; mix thoroughly.
  6. Transfer to a hot serving dish and sprinkle with chopped parsley, pepper, grated cheese, and remaining basil.
