Ingredients

  • 1 stick butter
  • 4 to 6 (8 oz.) red fish fillets
  • 1 cup flour
  • 3 lb. crawfish meat
  • 1/2 cup green onions
  • 1 tsp. lobster base
  • 3 cups water
  • 2 tsp. chopped parsley
  • 3 bay leaves
  • 1/4 tsp. thyme
  • 1/4 tsp. cayenne pepper
  • dash of granulated onion
  • 1/2 tsp. garlic, chopped
  • juice of 1 lemon
  • salt and pepper to taste

Instructions

  1. Season red fish fillets on both sides and lightly dredge in flour.
  2. Broil the fish in butter until cooked through.
  3. Pour lemon juice over the fish when done and keep warm.
  4. In a saucepan, melt butter and add flour, stirring until light brown.
  5. Add crawfish meat, lobster base, and water to the saucepan.
  6. Bring the mixture to a boil, then add green onions, parsley, bay leaves, thyme, cayenne pepper, granulated onion, chopped garlic, salt, and pepper.
  7. Simmer the sauce for about 10 minutes.
  8. Serve the seafood mixture over the broiled fish.
