Ingredients
- 1 stick butter ⓘ
- 4 to 6 (8 oz.) red fish fillets ⓘ
- 1 cup flour ⓘ
- 3 lb. crawfish meat
- 1/2 cup green onions ⓘ
- 1 tsp. lobster base ⓘ
- 3 cups water ⓘ
- 2 tsp. chopped parsley ⓘ
- 3 bay leaves ⓘ
- 1/4 tsp. thyme ⓘ
- 1/4 tsp. cayenne pepper ⓘ
- dash of granulated onion ⓘ
- 1/2 tsp. garlic, chopped ⓘ
- juice of 1 lemon
- salt and pepper to taste ⓘ
Instructions
- Season red fish fillets on both sides and lightly dredge in flour.
- Broil the fish in butter until cooked through.
- Pour lemon juice over the fish when done and keep warm.
- In a saucepan, melt butter and add flour, stirring until light brown.
- Add crawfish meat, lobster base, and water to the saucepan.
- Bring the mixture to a boil, then add green onions, parsley, bay leaves, thyme, cayenne pepper, granulated onion, chopped garlic, salt, and pepper.
- Simmer the sauce for about 10 minutes.
- Serve the seafood mixture over the broiled fish.
