Ingredients

  • 1 1/2 c. cooked brown rice
  • 1 1/2 c. shredded part skim milk Mozzarella cheese
  • 1 egg, beaten
  • 1 tsp. oregano
  • Pam
  • 1 c. broccoli flowerets
  • 1 c. sliced zucchini
  • 1 c. sliced fresh mushrooms
  • 1 small onion, sliced

Instructions

  1. Combine rice, 1/2 cup cheese, and 1/2 teaspoon oregano in a medium bowl.
  2. Stir well.
  3. Press mixture evenly into a 12-inch pizza pan coated with Pam.
  4. Bake at 400° for 25 minutes.
  5. Coat a large nonstick skillet with Pam.
  6. Place over medium-high heat until hot.
  7. Add broccoli, zucchini, mushrooms, and onion.
  8. Saute until tender.
  9. Combine tomato sauce and remaining oregano.
  10. Spread evenly over baked crust.
  11. Top with sauteed vegetable mixture and sprinkle with remaining 1 cup cheese.
  12. Bake at 400° for 10 minutes or until pizza is thoroughly heated and cheese is melted.
