Ingredients

  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 4 eggs
  • 1 c. nuts
  • 2 c. pumpkin
  • 1 tsp. soda
  • 2 c. sugar
  • 1 c. oil

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, mix together flour, baking powder, salt, cinnamon, and baking soda.
  3. In another bowl, beat the eggs and then mix in the pumpkin, sugar, and oil until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the nuts.
  6. Pour the batter into a greased baking dish and spread evenly.
  7. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
