Ingredients

  • 8 hard-boiled eggs
  • 1/3 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dry mustard
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 (10 oz) can cream of shrimp soup
  • 1 cup milk or sour cream
  • 3/4 cup grated Cheddar cheese
  • 1 cup croutons

Instructions

  1. Cut the hard-boiled eggs in half lengthwise and remove the yolks.
  2. In a bowl, mix the egg yolks, mayonnaise, salt, curry, paprika, and dry mustard until smooth.
  3. Stuff the egg white halves with the yolk mixture.
  4. Arrange the stuffed eggs in a 6 x 10-inch baking pan.
  5. In a separate bowl, combine the cream of shrimp soup, milk or sour cream, melted butter, flour, and three-quarters of the grated Cheddar cheese.
  6. Pour this mixture over the eggs in the pan.
  7. Sprinkle with the remaining cheese and the croutons on top.
  8. Bake at 350°F (175°C) for 15 to 20 minutes until bubbly and golden.
