A creamy, cheesy Brussels sprouts casserole with artichoke hearts and toasted almonds, perfect as a comforting side dish for family dinners or holiday gatherings.

Ingredients

  • 10 oz. frozen Brussels sprouts
  • 14 oz. can artichoke hearts
  • 2/3 cup light mayo
  • 1/2 teaspoon celery salt
  • 1/4 cup Parmesan cheese
  • 1/4 cup soft margarine
  • 2 teaspoons lemon juice
  • sliced almonds

Instructions

  1. Cook the Brussels sprouts in 1/2 cup water until tender; drain.
  2. Drain the artichoke hearts and cut them in half.
  3. Mix the cooked Brussels sprouts and artichoke hearts together and place in a buttered casserole dish.
  4. In a separate bowl, combine light mayo, celery salt, Parmesan cheese, soft margarine, and lemon juice.
  5. Spread this mixture evenly over the Brussels sprouts and artichokes.
  6. Sprinkle sliced almonds on top.
  7. Bake at 425°F for 10 to 15 minutes until golden and bubbly.
