Ingredients

  • 1 lb. pinto beans
  • 3 Tbsp. brown sugar
  • 1 green pepper, diced
  • 3 Tbsp. chili powder
  • 1 tsp. dry mustard
  • 1/2 cup salt pork
  • 2 medium tomatoes, diced
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1/4 tsp. dry oregano
  • 1 (4 oz.) can diced green chiles

Instructions

  1. Boil the pinto beans in 6 cups of boiling water for 2 minutes.
  2. Let the beans stand for 1 hour.
  3. Rinse the beans twice.
  4. Add 3 1/2 cups of fresh water and cook the beans until tender.
  5. Add remaining ingredients and simmer uncovered for 1 1/2 hours.
