A hearty and flavorful liver stir-fry with vegetables, simmered in a tomato-based gravy, perfect for a satisfying family dinner on a busy day.

Ingredients

  • 1.5 lb sliced beef liver
  • 1 tsp salt
  • 3/4 tsp black pepper
  • 1/4 cup flour
  • 3 tbsp oil
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 green pepper, chopped
  • 2 cups chopped tomatoes

Instructions

  1. Season the sliced liver with salt and black pepper, then coat with flour.
  2. In a large skillet, heat oil over medium-high heat and quickly brown the liver about 1 minute on each side.
  3. Place the browned liver in a greased baking dish.
  4. Add chopped celery, chopped onion, chopped green pepper, and chopped tomatoes to the dish.
  5. Cover and bake at 350°F (175°C) for 30 minutes.
  6. Remove the cover and bake for an additional 10 to 15 minutes to thicken the gravy.
  7. Serve the dish hot over cooked rice.
