Ingredients

  • 1/2 cup chopped leeks (white only)
  • 2 cups sliced mushrooms
  • 3 tablespoons butter
  • 4 1/2 tablespoons flour
  • 2 1/4 cups chicken broth
  • 1/2 cup white wine
  • 1 cup light cream or half and half
  • salt and pepper to taste
  • pinch of thyme
  • dry sherry to taste

Instructions

  1. Saute leeks and mushrooms in butter without browning until soft.
  2. Remove from heat and mix in flour.
  3. Add chicken broth and white wine; bring to a boil.
  4. Add light cream and simmer for 10 minutes.
  5. Season with salt, pepper, thyme, and sherry to taste.
