Butternut Bisque

- Cube, peel, and set aside the butternut squash.
- Melt the butter in a large soup pot.
- Add the sliced carrots, chopped onion, and chopped celery. Saute until soft.
- Stir in the cubed potatoes and the prepared squash.
- Add the chicken stock and bring to a boil.
- Reduce heat and simmer, partially covered, for 40 minutes.
- Add the curry powder, a pinch of nutmeg, and a pinch of ginger.
- Puree the soup in batches in a blender until smooth.
- Return the pureed soup to the saucepan.
- Add more stock if necessary to thin the soup.
- Season with salt and pepper to taste.
- Serve hot with a dollop of sour cream if desired.
