Butternut Bisque

Ingredients

  • 2 1/2 lb. butternut squash
  • 2 Tbsp. butter
  • 2 carrots
  • 1 onion
  • 1 stalk celery
  • 2 potatoes
  • 5 to 6 c. chicken stock
  • 1 1/2 tsp. curry powder
  • pinch of nutmeg
  • pinch of ginger

Instructions

  1. Cube, peel, and set aside the butternut squash.
  2. Melt the butter in a large soup pot.
  3. Add the sliced carrots, chopped onion, and chopped celery. Saute until soft.
  4. Stir in the cubed potatoes and the prepared squash.
  5. Add the chicken stock and bring to a boil.
  6. Reduce heat and simmer, partially covered, for 40 minutes.
  7. Add the curry powder, a pinch of nutmeg, and a pinch of ginger.
  8. Puree the soup in batches in a blender until smooth.
  9. Return the pureed soup to the saucepan.
  10. Add more stock if necessary to thin the soup.
  11. Season with salt and pepper to taste.
  12. Serve hot with a dollop of sour cream if desired.
