Ingredients

  • turkey giblets
  • 4 c. water
  • 2 c. chopped celery and tops
  • 2 c. chopped onion
  • 1 c. chopped carrot
  • 1/2 c. snipped parsley
  • 1/2 c. margarine or butter
  • 1 tsp. ground sage
  • 1 to 2 tsp. dried rosemary
  • 2 Tbsp. sugar
  • 10 c. dry bread cubes

Instructions

  1. Combine giblets, except liver, and water in a large saucepan. Bring to boiling; reduce heat.
  2. Simmer, covered, 45 minutes.
  3. Add liver, celery, onion, carrot, and parsley.
  4. Simmer, covered, for 20 minutes more.
  5. Drain, reserving 1 1/4 cups liquid.
  6. Add margarine to reserved liquid; stir until melted.
  7. Stir in sage, dried rosemary, and sugar, if desired.
