Ingredients

  • 1 lb. ground beef
  • 1 can kidney beans
  • 2 c. cooked rice
  • 2 tsp. chili powder
  • 1 tsp. salt
  • 1/2 c. finely chopped green peppers
  • 1 c. finely chopped onions
  • 1 (8 oz.) can tomato sauce
  • 1/4 lb. Cheddar cheese

Instructions

  1. Brown the ground beef in a skillet until fully cooked and drain excess fat.
  2. Add the kidney beans, cooked rice, chili powder, salt, chopped green peppers (if using), chopped onions, and tomato sauce to the beef.
  3. Mix well and heat through until hot.
  4. Sprinkle the grated Cheddar cheese on top and let it melt before serving.
  5. Serve with Tostado chips or Fritos and a tossed salad.
