Texas Beef Casserole

A hearty Texas-inspired beef casserole with flavorful chili spices, tender vegetables, and pasta, perfect for comforting family dinners or casual gatherings.

Ingredients

  • 2 medium onions, sliced
  • 1 small green pepper, minced
  • 1 Tbsp. cooking oil
  • 1 lb. ground beef
  • 2 c. cooked tomatoes
  • 1/2 c. cooked elbow macaroni
  • 1 1/2 tsp. chili powder
  • 1/2 tsp. salt
  • dash of pepper

Instructions

  1. Heat oven to 350°F (175°C).
  2. Saute sliced onions and minced green pepper in cooking oil until transparent.
  3. Remove cooked vegetables from pan and set aside.
  4. Cook ground beef, draining fat as it accumulates.
  5. Cook until the beef is well done and falls into small pieces.
  6. Drain beef on paper towels.
  7. Place drained beef in a large bowl.
  8. Stir in cooked onions, green pepper, cooked tomatoes, cooked elbow macaroni, chili powder, salt, and pepper.
  9. Pour mixture into a 1 1/2-quart baking dish with lid.
  10. Cover and bake for 1 hour, removing cover for the last 15 minutes.
  11. Serve hot.
