Ingredients

  • 1 cup boiling water
  • 2 1/2 teaspoons baking soda
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 egg
  • 2 cups buttermilk
  • 2 1/2 cups flour
  • 1/2 teaspoon salt
  • 2 cups all-bran cereal
  • 1/2 cup chopped nuts
  • 1 cup chopped dates or raisins
  • 1 c. chopped dates or raisins

Instructions

  1. Dissolve baking soda in boiling water; let it cool.
  2. Cream together shortening and sugar.
  3. Add the cooled water mixture and 1 egg; beat well.
  4. Stir in the remaining ingredients in order given, beating well after each addition.
  5. Store the batter in the refrigerator overnight or up to 6 weeks.
  6. Preheat oven to 375°F (190°C).
  7. Pour the batter into muffin tins.
  8. Bake for 20 minutes or until golden brown.
  9. Yield: approximately 3 dozen muffins.
